Rainy night dinner in; Chicken Pot Pie with Cheddar Herb Biscuit Topping

This weekend was definitely one of those – lets stay in and cook ones. Between the rain and the miserable drivers; it just was worth it to me to head out on Saturday night. So while figuring out what to make, Paul suggested I do Chicken Pot Pie.

Seemed like a good idea and one that would be able to handle a casual night at home. The is the adapted recipe I use.

img_0201Note: For this version I worked with what was already “almost, almost” home made. That meant I used a boxed biscuit mix (2 of them), Cooked and shredded chicken; our local grocery store roasts them and started selling the shredded meat. To make this even easier – use the pre-chopped veggies. the other important thing to remember about this recipe is that the amounts are suggestion – customize it to what you have handy.

What to have handy:

  • 1-2 tablespoon of canola or corn oil (coconut or olive oil will work too I am thinking)
  • 1 clove of garlic (or 1-2 teaspoons of pureed Garlic from the tube)
  • 1/2 – 1 cup flour
  • 2 cups chopped Carrots
  • 2 cups cubed Yams
  • 1 cup chopped Celery
  • 1 med Onions chopped
  • 1 bag frozen Peas
  • 2 packages of cooked touch shred chicken (between 3-4 cups)
  • 7 cups of Chicken Stock (low sodium)
  • 1/4 – 1/2 teaspoon Salt
  • 1/4 – 1/2 teaspoonPepper
  • Chopped Parsley
  • Poultry spice mix (or any combination your prefer)

Preheat the oven to 425 degrees

In a heavy skillet; over medium-high heat (for cast iron pan, you may want to used medium heat and gauge the heat level once hot):

Toss in the oil, carrots and yams, stir to coat with oil for 2-3 minutes, then add celery, onions. Stir and cook another 3 minutes, add garlic, salt, pepper and 1 teaspoon of the poultry spice mix. Stir and continue to cook until veggies are cooked through but not browned.

 Add 1/2 cup of flour (or a gluten free alternative) on top of the veggies and stir, cooking for a few minutes more.

Add 6 cups of chicken stock, holding back 1 cup for later if needed.

Now – if by now you realize your skillet isn’t large enough (which happened to me),  take out 1/2 of the mixture and add it to your casserole dish. If you are using a 1/2 recipe you can actually back the whole dish in the skillet.

Add the chicken, carefully stir the mixture slowly until it boils, them lower the heat and simmer 8-10 minutes. TASTE IT!  Does it need more salt, pepper, etc.

(It should thicken some – it you find it isn’t thick enough, add some of the remaining flour to 1/2 cup of the remaining stock, whisk and add to the mixture, stirring until you get the consistency you want)

Remove from the heat.

Add chopped parsley (or other fresh herbs to your taste), stir and pour into your casserole pan (or leave in the skillet if is over safe).

For the topping;

Mix up a prepared biscuit mix as instructed. I used Red Lobster Cheddar Herb Biscuit mix but any will do or you can make your own.
Spoon (or use your hands its a pretty sticky dough) to cover the “pie”. This creates the top “crust”. Try not to layer it on thicker than an inch or so – if you do – you may need to let it cook longer. to make sure the under side of the biscuits cook.

Bake

Place casserole on a cookie sheet, and place in the oven. Bake at 425 degrees for  35 – 45 minutes.

 Around 30 minutes check the biscuit topping; if the top is browning too much – loosly place foil over the top for the rest of the cooking time.

Optional:

While baking- melt butter and mix with herbs ( I used 1/2 packet of the herb packet from the biscuits – but any will do).

img_0201When you remove from the oven, brush the melted herb butter over the top of the biscuit topping.

Casino & LaCrosse In CT

Overall The Arena at the Mohegan Sun Casino a nice facility; good sized, and has a solid sound system. It’s clean and does’t feel as “cold” as some arena’s. Staff are pretty cordial from scanning through food consessions. My biggest disappointment and the reason I don’t to give it more than a three if I were rating it out of 5, is around its no “outside” food rule.
We were traveling with a senior, and  had stopped to have a meal in the casino while the kids were watching the lacrosse game. Our plan was then to head out to watch the kids actually get a chance to play on the field after playing in the casino and eating.

IMG_9971We had eaten at Hash House A Go Go, so as the real game ended and we entered to see the kids,  they wouldn’t let us bring the leftovers in. Forcing us to toss it.

So that was a disappointment and with the money spent in the casino and for the meal that we had enjoyed, the experience “left a bad taste in my mouth”.

If I were in town and planning to use the Arena again I would be less inclined to make use of the casino and food as part of the package evening in the future.

Me? At a Casino? Oh My…

Being a fan of the Hash House from my time in Las Vegas – when looking for a place to eat while visiting the Mohiegan Sun Casino on Sunday with my Mom – I knew this Hash HouseIMG_9964 IMG_9965 IMG_9966 would work. My mom is a fan of down home basics, often with an italian flair – but basic american food works too. And thats that they do well here, hearty portioned and solid foods. While she went easy with eggs, the corned beef hash ( you actually get to choose from 4 types of hash including a vegetarian one), eggs over great potatoes. I opted for my general favorite the Friend chicken breasts and waffles (umm and by they way thats two breasts and 4 waffles – so be hungry or ready to share.) As expected the food was good – not overly spiced so most tastes will find it mild and may need a bit of hot sauce to heat it up. Portions are hearty as I mentioned above. Over all, given its in a casino attached to an arena – one of several good food finds!

My biggest beef, which they can’t control was having to through away my leftovers in order to enter the Arena to see the kids play post the Lacrosse game..

God-Kid Day Excursions in CT

After living in CA for the last 25 years and not being back to visit family in over 6 years,  I wanted to get some time with each of my god-kids 1:1 while in town for my Mom’s 75th.IMG_0034

My god-son, Danny and I and I started our day last week with the ever popular breakfast and movie day. When trying to figure out where to go, he mentioned State Street Cafe and said the key words for me – old school! IMG_0029Well pegged that right. Not only does it have an old school diner feel, it is slowly weaving in new school treats like Chia seeds into the meals. We opted with the basics biscuits & eggsIMG_0031
with a hash side, and him getting omelette with some incredible potatoes, but from the looks of the other meals coming out of the openIMG_0033IMG_0032 air kitchen – its a try-all kind of menu. Sitting  directly next to a local cross-fit gym, the crowd is an electric mix of young and old, with the non-nonsense approach to eating that New Englanders do so well – but take it from me – this is not your “Mels Diner” type place..  so while it may not be fancy,  nothing about State Street dated – just good solid food.

Later that day, I started round two with my other god-kid Laura, IMG_0043be we opted for Sushi. Now face facts what does a 50-something gay man and a 15 year old young lady have in common? Food & boys. So after getting the low down on your new bf, and filling her in on mine and our little monster Dino. IMG_0045We started the food & nutrition chat; which even got her to try edamame for the first time, before starting back to her grandmothers house and dinner at my sister’s ( her mom’s). IMG_0044

So over all – we had a great day

Food styling hits food kiosks at SFO’s T2

Fly enough and you begin to notice a lot of differences between airports. In fact, one of the nicer differences being noticed across the country is “Style Food Porn”. So while in the past some of the nicer restaurants at airports served nice dishes to balance the fast food option, snow even the kiosks are getting into the game.
Airport management & leadership seems to be finally getting on board that just because people are traveling, this shouldn’t mean that the food that they buy shouldn’t look nice, be diverse, fresh and have flavor. (I know real concept, right). So they’ve begun to spend a lot more time on the food making them look appealing and appetizing as well as diversifying the options. Think of it as “runway stylists” for food kiosks.

These are a few shots from down in terminal one at San Francisco airport at Dogpatch Bakehouse Cafe. 

Now if they could just figure out how to get themselves open a half an hour earlier so that you don’t have such long lines specially for those flyers who have to get here by 4 o’clock am in order to get on a flight that’s boarding at 5:25 am.

  

    
   

   

 

Birthday dinner with the Gang at Broadway Prime

Some of my friends and I, when we get together tend to aim towards a few favorite restaurants – but this week we went to a new place. Broadway Prime had been one on my list for a while to try as I havIMG_9750e been a huge fan of House of Prime Rib in San Francisco – so when one of us decided to pick Prime as the goto for a group birthday celebration, I was excited.

An easy drive south of San Francisco, located in a cute village like setting – it was easy to both find and park. With more than half of the group arrived -they seated us pretty fast up on the second level. (we weren’t happy they they had broken out group up into two tables which wasn’t what the host had asked for – but the only response provided was that we would have had to wait until the the other party ended) – not the nicest customer service (but I wasn’t the host so I didn’t say anything).

Now here is where the evening started to take a turn. With another large group up there and several smaller tables of 4, it looked like only one server was assigned. So it was well over 20 min before our drink orders were taken, then at least another 15 min for the food order. Luckily we were chatted and catching up and only a few side comments surfaced as to “gosh it was taking a while to get service”. Once the orders were placed, the meal came out pretty well timed after the salad course. IMG_9728

Ok so- the Strengths! The meats was great. At our table we had several different cuts, including one end cut, and everyone agr
eed they were moist, tender and had good flavor. The Baked potatoes were nicely steamy and melty good – always a treat when getting ready to toss some calories away.

The Opportunities: Not all the plates arrived with hot food. Several of the meats were barely warm (including mine and I had the end cut) so that was a disappointment. The sides were on the bland side – both the creamed spinach and corn were lacking any “wow”. The spinach actually was almost pasty and lacked much in the way of seasoning at all. (maybe some nutmeg would have helped?) even salt and pepper at the table didn’t do much and again they weren’t particularly hot either.

We figured that they may have been hit with a rush, understaffed, or maybe the kitchen got slammed – but even the pop-overs which were good didn’t get to the table until well after we had started eating. I couldn’t see any bus-persons assisting and it felt as it we had one server to divide between the two large groups.

Overall – I would try the resturant again with a smaller group or a few couples when in the area. But not sure I would make it a destination again as a “must go to”.

 

 

Oh Nuts!

Because cashews made into milk wasnt enough. Now I have to contend with hazelnut/chocolate beverages !! At least they are the only two nuts I have an allergy too. But it’s a shame they are such popular additions to so many recipes. 
   
 

The Lee Hello is a Goodbye

She nails it on how many continue to feel, as we loose the “heart” of San Francisco to growing $’s. 
Even for me after 20 years here, it’s only been the last 10 years of which I made a yearly income over $20k because of my committment to gay mens health, HIV prevention and substance user services at a non profit and social justice level. 

So without having purchased property back in the day to sell now, I’m priced out from owning here. Which frustrates me to get that feeling of “if you can’t afford to buy, go ..” from the entitled new rich and old established power brokers who want more . 

 I’ve paid my dues San Francisco and it’s time you deliver
