Double Cornbread Muffins

I think the mini “Double Cornbread Muffins” for bookclub today were a hit. Since todays book was “There There”, I looked for some recipes from local Native inspired stories at www.firstnations.org.

I may play with the flavor more and find a way to make them a bit more tender. Being a combined dough with whole wheat flour, regular flour and corn meal, even the acid from the buttermilk wasn’t enough to yield a  super soft muffin. Then again this is adapted from a more tradition recipe too. I think I might take some of the Sage and infuse it in the melting butter then strain the next time for a deeper sage flavor. Also did a batch of full size for Paul to bring to his office too.

Will likely make them again as they were especially good with Calabrian pepper spread.
